Blackened Grilled Chicken Sandwich

Aight Guys!! If you are looking for something that is always a crowd pleaser? Then let's talk chicken thighs! They are super easy to cook and oh so dang tasty! Just think about a blackened chicken thigh sandwich with a fire roasted garlic & habanero mayo, dill pickles, all served on a toasted Hawaiian roll! Son of a gun is it ever good! Now let me show you how we made it!

Ingredients

  • 4 — Boneless Skinless Chicken Thighs
  • 12 — Kings Hawaiian Rolls
  • 1 — Cup of Mayonnaise
  • 3 — Tbsp of Melinda's Fire Roasted Garlic & Habanero Sauce
  • Dill Pickle Chips
  • 4 — Tbsp of Butter
  • Lane's BBQ Blackening Seasoning
  • Aight Guys!! Smokey Sweet Rub
  • Bear & Burton's Everyday Hot Sauce

Directions

  1. Preheat Pellet Grill to 325 degrees.
  2. Take your chicken thighs and rub them with Bear & Burton's Everyday Hot Sauce as a binder and season good on both sides with Lane's BBQ Blackening Seasoning first and then a layer of Aight Guys!! Smokey Sweet Rub.
  3. Put your chicken thighs on the grill and allow them to cook until at least 170 degrees internal temperature flipping halfway through.
  4. While your chicken is cooking, mix mayonnaise and Melinda's Fire Roasted Garlic & Habanero sauce together really well and set in the fridge.
  5. Divide your Hawaiian rolls into sections of 4 rolls each and slice them in half. Add butter to a skillet and toast your Hawaiian buns until golden brown.
  6. Time to assemble! Spread your mayonnaise mixture on the top and bottom buns, place a chicken thigh on the bottom bun, add as many dill pickle chips as you like, place the top bun on and dig in!
