Mix game meat and all other patty ingredients in a large glass bowl.
Take a baseball size handful of meat mixture and roll into a ball. On a piece of parchment paper toss ball down, press ball down and follow along the sides with your other hand for a perfect patty. Do this until all patties are formed, then place them in the fridge for 30 miniutes before cooking. THIS IS KEY.
Preheat grill to high heat.
Place the the burgers on the grill and don't touch!!! Once they have cooked for 5 minutes, flip them once...ONCE.
When your burgers are almost done, toss the bottom and middle bun on the grill and cheese how you like. If you don't want extra crispy buns, feel free to use a baking sheet.
Now we layer.
Bottom cheese bun, special sauce, pickles, onions, lettuce, burger patty, middle cheese bun, special sauce, pickles, onion, lettuce, burger, sauce, and top bun.
Go ahead and mix up the special sauce whenever you feel like it.
